    Job Description

    The Baker/ Pastry Assistant will prepare, bake bread and pastries according to recipes, quality and presentation standards. Will follow and ensure compliance with food safety handling policies and procedures, including personal hygiene. Monitor the quality of food prepared and portions served. 


    • Prepare products using all methods, established portions, and recipes for baking preparation.
    • Manages daily production and communication of product counts with Management team.
    • Prepare breakfast items for bake including croissant, Danish and muffins according to Omni Rancho las Palma’s standards for café shop, restaurant and banquet events.
    • Prepare and bake bread items including loaves, buns, rolls, cookies, etc.
    • Responsible to properly label, organize and rotate bake ingredients in freeze and storage areas; includes rotation of breakfast pastries, breads and pastries for restaurant and Palms Café.
    • Rotates bake inventory (merchandise and product supplies) to maintain freshness and quality, make products fresh daily.
    • Receive orders, check invoices, and put deliveries away as needed.
    • Notify the Manager of any food quality issues, inconsistencies of product with recipes, low inventory, etc.
    • Maintain a clean and sanitary bake area and station at all times.
    • Comply with established weight and measures, health, sanitation, and safety policies and support Pastry operation.
    • Must be available to work 3;00am shifts as needed; includes weekends and holidays.
    • Review banquet function sheets on a daily basis in order to ensure adequate preparation of pastry items.
    • Reports to Pastry Chef.
    • Reviews all pertinent food and beverage requisitions, inter-kitchen transfers and production quantities, and verifies all special food requests with Pastry Chef.
    • Prevents the spoiling and contamination of foods by enforcing proper sanitation practices and ensuring compliance with policy and health regulations.
    • Inspects delivery of food to ensure the highest level of quality.
    • Demonstrates an understanding and commitment to total quality efforts by striving for continual improvement, working cooperatively as a team member and concentrating on both internal and external customers.
    • Complies with departmental policies, rules and regulations set forth in the Employee Handbook and Management.



    • At least 3 years’ prior work experience as a cook, baker or enrolment in a culinary program.
    • Ability to use scales, thermometers, measuring, and divide and multiply recipes
    • Good organizational, communication and problem-solving skills
    • Experience working with baking equipment including oven, mixers, etc.
    • Clear understanding of kitchen and food safety guidelines
    • Self-starter, ability to work independently and as part of a team
    • Move, lift, carry, push, pull, and place objects weighing less than or equal to 25 pounds without assistance.
    • Perform other reasonable job duties as requested by Supervisors.
    • Enthusiasm, energy and positive attitude with a desire to learn and develop
    • Excellent organizational and time management skill
    • Must be able to stand for 8+ hours per day
    • Follow all Safety and Security procedures & attend all safety training
    • Flexible availability to include nights, weekends, and holidays
    • Must have valid Riverside County Food Handlers Card
