    Job Description

    Responsible for requisitioning all meats from storeroom and cutting as required for banquets and restaurant outlet kitchens.


    • Solely responsible for maintaining a clean and sanitary Butcher shop per health code regulations including walk-ins and equipment.
    • Makes sure all meats and any other food products are kept at proper temperatures to meet health code requirements.
    • Control and maintain protein inventory.
    • Order all protein to be distributed by outlet.
    • Proteins will be requested by Sous Chefs to butcher via requisition forms. Steaks must be cut within requested size.
    • All scraps will be retained and ground for use as hamburgers, chili, taco meat, etc.
    • Responsible for making sausage, pate’s, etc. as required.
    • Responsible for cutting all fish as required.
    • Complete other duties as assigned by management.



    • Required to have at least 2 years culinary/butcher experience in a hotel or restaurant kitchen.
    • Must work well with others to produce high volumes of work while maintaining quality per Omni standards.
    • Must be familiar with batch and quantity cooking in a high volume restaurant.
    • Excellent written and verbal communication skills as well as organizational skills. 
    • Must have basic mathematical skills and be able to adhere to recipes.
    • The ability to work in a fast paced high pressure work environment while executing delegated tasks and assignments.
    • Culinary degree and/or formal training preferred.

    Physical Requirements:

    • Must be able to lift, push, pull and carry moderate weight. Must be able to walk/stand for extended periods of time, with frequent bending and twisting. Must be able to utilize culinary tools (knives, commercial equipment, etc.) and taste/smell.

    Working Environment:

    • Interior of hotel in restaurant and kitchen areas with exposure to humidity, steam and extreme temperatures.
    • Exposure to hazardous cleaning chemicals.

    Tools & Equipment:

    •  Cooking utensils and equipment.
